Beef Burgers with Root Vegetables

Ingredients (serves 1)

1 serving Carrots
(or vegetables from your food list)
1 serving Minced Beef
a little Vegetable stock
a little Thyme, gently chopped and crushed
a pinch Oregano, dried
a pinch Salt, pepper
1/2 slice (12.5g) Wholegrain rye bread
10ml Butter or ghee


Peel and dice the carrots and celeriac. Put the vegetables into a pan with a little vegetable stock. Cover the pan and cook until tender.  Drain and puree the vegetables using a hand blender.

Soak the rye bread in a little warm water and squeeze well to remove any excess water.  Mix the bread with all the other ingredients, including the vegetable puree. Season well with salt and pepper. Form into patties and grill or gently fry in butter or ghee until cooked through.
