Beef and Apricot Skewers

Ingredients (serves 1)

1 serving Vegetables
Bell Pepper
1 serving Beef fillet
a pinch Ground Paprika
a little Fresh or dried marjoram
a sprig Rosemary, finely chopped
a pinch Salt, white pepper
1/2 serving
Dried apricots
10 g
Butter or oil


Peel the onions and cut into large chunks. Cut the mushrooms in half and chop the peppers.

Cut the beef fillet into cubes and season well with the paprika, rosemary, marjoram, salt and pepper.  Using skewers, alternate the beef with the onions, mushrooms, pepper and dried apricots.

Gently fry the skewers in a thick bottomed frying pan, using a little butter or coconut oil, until the meat is tender and the vegetables are cooked through.


Fresh fruit can be used to replace the apricots if preferred.
